Some seeds germinated right away, others languished for weeks before sprouting. A few never sprouted. Despite my mixed results, I have a nice variety for the garden.

Wow!!!! My red amaranth is growing huge and healthy. I am trying a few of its leaves daily and they taste a little like spinach.Purslane (which I have never tried before) is coming up as well. So is arugula. And the lettuces. Can’t wait to try them all.In a couple of weeks they should all be fully grown and I look forward to making a salad with all these greens combined. What a treat! Add some extra virgin olive oil with good vinegar and shazammm!
