Nice pepper-like taste! Would like information on Hydroxytyrosol content.
I have read that the presence of hydroxytyrosols is a key indicator for high quality EVOO but it is hard to find EVOO producers on Amazon that provide hydroxytyrosol information. Here is what Drs. Perricone and Sears have to say about it. Hydroxytyrosol in extra virgin olive oil is only found in Spain and other parts of the Mediterranean. “Hydroxytyrosol is found in highest concentrations only in extra virgin olive oil that is obtained from olives grown in the Mediterranean region, particularly Spain. We don't know why this is. It might be the soil; it might be the particular type of tree. Even though hydroxytyrosol is found only in a few parts per million in olive oil, it is so powerful that it is probably the chief antioxidant in olive oil. Hydroxytyrosol slows the aging process in the skin by stabilizing the cell plasma membrane. Since it also prevents the oxidation of keratin protein, hydroxytyrosol makes the hair soft, shiny, and lustrous, and it prevents nails from peeling and breaking. And these great benefits can be yours with a daily salad of mixed dark leafy greens, topped with extra virgin olive oil.” (Nicholas Perricone, The Perricone Prescription, HarperCollins, 2004, pp. 65-73) How to tell if your EVOO has high levels of hydroxytyrosol. “But don't take my word for it-try this simple taste test. Take a teaspoonful of olive oil and put it in your mouth. It should have a buttery taste, as opposed to a bland oil taste. Now swish the oil along the top of your mouth with your tongue until it hits the back of your throat. You should notice a very pepper-like taste. Fresh quality
I have gone through several bottles of Oro Bailen, among other brands. It's one I can always rely on to be deliciously flavorful. As a premium olive oil, I do not use it for cooking i.e. with heat on the stove or in the oven, I use a quality but more common olive oil for that. The heat can destroy flavor nuances so it's a waste of an oil of this caliber. Instead I only use it as a flavoring ingredient such as with dressings, salads, chimichurris, dips, sauce or soup finishing, etc. Why this exact item on amazon? These fancy olive oils have an expiration date for a reason. They're still safe to use after they expire but the quality of the flavor degrades. Other listings don't necessarily specify which year's harvest the product being sold is from and you can end up with stuff that's past its prime. This listing explicitly specifies it's from the 2017 harvest, and that's exactly what I got.
