I don't know why I haven't reviewed this before, I love it.
This induction cooktop is highly accurate. I've made sauces, Ghee, deep fried, and all my stovetop cooking on it since June of 2019. I'm considering buying a second one. With the probe, deep frying temps aren't even a question, along with make sauces etc. When I make yogurt, and you have to heat to milk to over 180F, I set it to 182F, it beeps, I check all around the surface with my Thermapen, no more than a degree different. It's not inexpensive, but if you want to know what temp you're cooking, this is the item.

Game changer
I have waited a long time for a burner like this. Since it controls the temperature of the pan or, if you wish, the contents of the pot (using an external probe), making delicate things is a snap. When I make invert sugar, it's simply a matter of setting the temperature and letting the burner figure out how much heat to add. A delicate sauce thickened with egg yolk is easy to make; set the burner on 150 degrees and stir until you get the viscosity you want. No need to worry about getting scrambled eggs. To fry salmon skin, set the temperature you want and know that nothing will burn; it simply won't get hot enough to cause problems. Truly, as one reviewer noted, it'll change the way you cook.

Fits into my home culinary lab quite well!
I've had several commercial induction burners - this one is incredible. Very responsive, precise, tunable and repeatable. Confirmed temperature readings of the included probe with two separate thermocouple probes in both liquid and oil. Worth the money.I can see why Grant Achatz is outfitting the Aviary NYC with only Control Freak Induction Burners.
