Columbus Felino Salami - 2 lb Average

The town of Felino, where the name comes from, in located in the County of Parma, Italy, where I grew up. I am a pretty good connoisseur of cold cuts, from culatello to prosciutto and salami. This salami is pretty close to the one you can find in Felino. Most of the times it is well cured, as it should be.

This is the flavor that reminds us of the old country.It stays well in the fridge as well as out for a month. (Maybe longer but we finish it before )The skin has a tendency to dry and become hard to remove with time. We do like we used to do in the old country: wrap a piece of humid cheese cloth around the top part of the salami.

If you can afford the best, this is it. Cos%co used to sell Columbus, which is superior to the Gallo they sell now, though I open it and let it age/dry in the refer. Anyway, this salami is amazing and does have those nice pieces of high quality fat, along with the meat. This is so good, I peel the casing and cut it into small pieces and ration it to our two pampered dogs.This is as good, though some may debate this, Columbus Secchi Fiore. But, I like the casing and you eat the casing with the Secchis, which is what helps give quality salamis, via the mold/bacteria strain, the incredible aroma and flavor. The dogs are out of luck with this one

Did not like the casing. Tried to peel it of very difficult. Meat was good flavor though a little strong

The Felino has the right consistency and the right aging. Spices are present without covering the taste of the salame. The meat is chopped in the right way, fat and meat are well balanced.

Sorry to take exception with the one star reviewer and side wholeheartedly with the the five stars. This particular salami is one of the best I've had period and is consistently top notch. I'd argue better than some I've had in Europe.
