Q: Do the hot sauces have onions in them?

Nope! Our hot sauces are all about the peppers. They're 86% peppers, and the rest is vinegar, salt, and garlic.

Q: What is the shelf life of this item if left unopened?

Hard to say, as we've never left it open for extended periods. Normal shelf life is 2 years from bottling date. A bottle that has been left open overnight won't create any health hazards, but it may turn darker more quickly, or take on a more tangy flavor. It would just be a matter of taste. A low-pH product like hot sauce--made with quality ingredients--is an inherently safe food product.
