Wonderful recipes - literally life-changing!
This book has been a total revelation and my saviour through lockdown. I bought it in March 2020 after enjoying my sister-in-law's cooking for a vegetarian Christmas. It was just before the UK locked down and so being at home I had lots of time to try the recipes out. Every SINGLE ONE was fantastic in terms of flavour, ease of creation, health, enjoyment and general well-being. My whole family loved them. I started marking the ones I had cooked, making little notes on what was especially genius about the recipe and whether I had substituted any of the ingredients. By September 2020 I realised I had worked my way through the whole book!! Not one was a dud and so many of them are 'must-do-again's'. The effect of eating so much healthy, fresh homemade food was that I lost the appetite for sugary snacks and so usually only had fruit for afters. Along with more exercise, I attribute the fact that I LOST weight (about 2 stone!) during lockdown (not the norm!) to this book. It showed that healthy eating can be delicious and satisfying - you don't need anything else!! All my family are total Rukmini fans and I have now given or recommended this book to dozens of people. It's just the BEST recipe book I've ever had.

Tasty, creative and relatively simple dishes
We love these recipes in our house and a few have become staples for us. Tasty dishes without hours and hours of prep. I’m a big meat eater but would happily eat these dishes as an alternative

Good book but .....
I really enjoyed the book and have already started using it but the reason I have given 4 stars is that unfortunately as a very healthy eater who watches her fat and calorie content the book doesn't list these details for each recipe. Apart from that the recipes are well described and a really lovely thing about the book is that the writer has included snippets of her family and what are their favourite meals which makes you feel that she is actually speaking to you in person.

Really pleased I bought this, great recipes, healthy, colourful and easy to follow meals. The seller was also great, book as described and speedy delivery. thank you

Fantastic book!
This book has completely changed my way of eating. The recipes are so easy to chuck everything into a tin (in most cases) and place it into the oven that it makes healthy eating easy. I now eat so many vegetables every day and really enjoy them. Not only that, but the author makes the most basic looking vegetable dish so flavourful.All my lunches/dinners have come out of this book for the last 4 weeks. I’ve bought all the other roasting tin books too because whilst the others’ contain some meat/fish dishes, there is still a large amount of veggie/vegan dishes.

Amazing recipes, so easy, so delicious and all in one pan - you have to buy this book!
Wow! If you love one pan delicious, healthy meals like me, you will LOVE this book and the rest of them in the range. It's genius! The recipes are exceptionally straight forward and include a wide range of vegetables, herbs and spices. All cooked in the oven and ready in half an hour or thereabouts. There is so much flavour and variety to be had. It has even given me confidence to produce some fab meals with store cupboard/fridge ingredients. This has been a massive hit with our family too. It's GENIUS!

Poor formatting of kindle version
Bought this on the basis of the glowing reviews, but after skimming through the Kindle version, I've just asked Amazon for a refund.A few problems:* The Kindle formatting is just horrible (viewed in the App on my laptop). It either shows a small page in the middle of the screen, or you try to expand the page width and it gives you a double page spread but with the end of one recipe bumping up against the start of a new one rather than just having one recipe on screen. Most recipes go over more than one page when it should be easy to put them all on the same page in an electronic version. Some of the pictures are really small and some seem to be missing entirely (hard to know if that's just in the Kindle version or if some recipes just don't have pictures).* As is common with Kindle versions of cookbooks, there are mistakes that I imagine haven't made it into the final print version. For example, the author has written a recipe that includes taleggio cheese. Somewhere down the line, someone must have pointed out to her that taleggio isn't vegetarian and it's been switched to mozzarella. However, in the kindle version, the recipe title still mentions taleggio. This always makes me suspicious that a recipe has been written and tested with one cheese in mind and then another has been hastily substituted afterwards. Has it even been tested with that cheese? If not for the mistake, I would just assume that the recipe had been properly tested, but the mistake leaves me with lingering doubts.* Many of the recipes aren't really full meals. They aren't even full meals if you stick them on top of rice or stir in pasta. The vegan offerings in particular often seem like side dishes. I find this is a common problem when people who aren't vegetarians or vegans try to write vegetarian/vegan recipes. At the back of their minds, they must be thinking that when they make the dish, they'll just throw a chicken breast in there to round it out. There were a few recipes that did look complete, but most would need quite a bit cooking separately on the side which rather defeats the purpose of this book. I think it would probably be a good book for non-vegetarians to add some veg-heavy elements to a large family meal/pot-luck/buffet, but it's not an everyday book for a vegetarian.All in all, not really what I was looking for. I probably would have kept it if it wasn't for the formatting issues, but at this price, it's just not worth it when I can't view recipes properly.
