This soba has no added salt and holds its texture well without getting mushy. The flavor is mild for buckwheat and not bitter. Overall, a very good option.

I love Soba, but I’m on a low sodium diet, and most soba noodles have more than a full days allotment of salt. These are the one exception oven been able to find. Flavor is good, and with a home made broth of dipping sauce I can enjoy them without upsetting my cardiologist.

Family loves this soba. It cooks quickly, rinses cleanly, and isn't too slippery. Here's our favorite way to eat it - You'll need: chicken, butter or oil, Hakubaku soba noodles, thai peanut sauce (we use San-J) and any extra spices you like (we use fresh garlic, powdered thyme, fresh ground black and white pepper, and whatever will complement the side vegetables. A pot of water for the noodles, and a skillet or wok for the chicken. Dice your chicken, and sprinkle it with the dry spices. Start heating water for the soba noodles. Put a little oil or butter in a skillet or wok on a low heat. Toss in the garlic and let it start to soften and caramelize. Add soba noodles to the pot of boiling water. They will be done in 4 minutes. Add the chicken to the garlic and oil/butter. Spread it out so it's one layer. Put a strainer in the sink. The chicken should be cooked on one side now, so turn over all the pieces of chicken and let them cook on the other side. Has it been 4 minutes? Probably! Dump the noodles into the strainer and rinse with cool water. You can dump the noodles into a big bowl of cold water if you prefer. You want to cool them off and stop them cooking. Give the chicken a stir, and make sure it's cooked on all sides. Now gloop in some peanut sauce. Use enough to coat the chicken, plus some extra. Drain the noodles and carry them over to your skillet. Crank the heat up and throw those noodles in! Watch how they magically grab the leftover sauce as you stir things around. Hear the hungry murmurings of your household as they realize food is about to be eaten! Turn off the heat, portion out the food, serve with whatever veggies or sides your family will eat. (I use tongs to grab the noodles and chicken. The noodles like to slip away from spoons)
