The flavor was good but seemed to be about 75% fat and bone

Best iberico ham I've had in years!
Wow! Best iberico ham I've had in years... and I can't believe I'm having it am home in the US! As a Prime item, I received my jamon iberico from Jamonprive about 36 hours after I placed the order and have been extremely satisfied with both the process, the shipping, the presentation, and, of course, the jamon. It comes impeccably wrapped and, as it comes inside an elegant black textile bag, it can also make for an impressive gift. As a Spaniard who's very picky with my jamon, I can comfortably declare that this jamon is outstanding. Upon the first bite, you can immediately tell that it's a high quality "paleta". The slicing is smooth and (with a little practice!) produces gorgeous layers of red flavor that are hard to find outside of Spain. The jamon is beautifully cured with a soft texture and the perfect marbling to give it an unmistakable, full flavor that only an "iberico" can produce. The wooden stand and carving knife are great additions to the set, although I suspect if you're going to be repeat buyer, you'll probably want to upgrade those to ones that also add a little more design flair. All in all, very happy with my purchase. Will definitely be back for more!

Ham received is decomposing
Ham does not smell right. It does not have the classic iberico ham smell. Entire ham is mushy, not dry like other hams I have purchased before. The meat tastes like it is decomposing and it is awful. Please refund my money, or replace. I am happy to send the ham back for you to verify my argument.

Actual cost is $100 per Pound
I'm giving this 4 stars rather than 1 because I'm giving the seller the benefit of the doubt that this is the way it's supposed to be. This was my first time purchasing a whole leg of ham. The short of it is, once you clean away the fat and meat that's basically jerky (hard and dry) you're left with about 3 pounds of the good stuff for your $300. Ouch!I kept cutting and cutting to reach meat, only to find more fat. Look how broad and deep I've gone in the attached photo. This was after starting on the other side which was less fatty but so tough and grisly I was going to throw the leg out if it didn't improve.All that said, the experience was delightful prior to trying to eat the thing. My pulse raced when opening the package to find the Spanish customs stamps. Then the leg itself was nicely packed in high quality materials. It looked great! The stand is nice, as are the knife and sharpener. They also include an excellent instruction manual. Everything is really done right. But unless I just happened upon a bad leg, economically this is a really bad deal. Not the vendor's fault, but a bad deal.The meat is nice once you finally get to it, but IMO it's not worth $100/pound.

Made a delicious and unique gift
So far my wife and I have really enjoyed this. I bought it as a gift for her. It's an impressive statement piece to have in your home, set up on it's stand. It is fun to carve up and make plates of jamon iberico. It feels like we are enjoying tapas in Spain. It will be a lot for us to eat, but we are up for the challenge, as it has been absolutely delicious so far!It is expensive, but I think a good value for such a unique, delicious gift. We'll have to see how we do in using up this whole leg, but I can imagine we'll buy this again.

Hoof was removed from the ham leg.
There are two types of ham legs from spain. They are, Pata Blanca (white foot) and Pata Negra (Black Foot). The difference between the quality and flavor of these two types of ham legs are extreme. Black foot hams are not only way better tasting with a deeper and richer red color than a white foot, but the price difference is about $100.00 more for the black foot. My issue is that the company who provides this ham cut the hoof off and now other than the taste, it is impossible to verify that it is in fact a black foot or pata negra. The photo on Amazon clearly shows the black hoof but my ham arrived with the hoof removed which now it is anyone's guess as to the quality of ham I received. If you advertise a black foot and the photo of it shows the black foot on Amazon then when when it gets here it should have a black hoof just like in the photo. This ham leg cost me $310.00 and I am very disappointed as I have no idea which one I received...........

All bones
The taste was good, but it was all bones one side had no meat so it was very disappointing since it was so expensive. I’ve bought others before and it has more meat. 😩

Nice piece, but half is bones and fat, which smelled a little rancid.
Shoulder came timely, well packaged in a huge Amazon box.Upon opening, the first impression was a strong rancid smell coming from the outer fat.After cutting out most of that fat and starting to slice out the ham, the reaction was more positive. Meat tasted very flavorful, although the first slices coming from the end still had the rancid smell. There was a note inside on what to do if there was mold on the ham, but this was not the case here. No mention of rancid fat in that note.I already had a good jamon stand and knife, so I didn't use those provided. Just be aware that probably half of it is really bones and fat/skin, and maybe 30-40% is real meat that you can cut and that is enjoyable to eat because it's not too dry. Just came back from another trip to Barcelona this summer, and this was not quite the same but it's difficult to get the same import quality as in Spain for most pieces anyway.Overall, I am still happy with my purchase, but I wish it had been stored more adequately before shipping.It was kinda fun to spend a total of several hours slicing out the meat, and it definitely impressed my guests, but considering the real amount of meat for the cost, and that it's regular pata negra (the race), not the higher level Bellota (acorn diet), I will likely order a different ham next time, preferably without a stand or knife so that the cost goes exclusively into a higher quality product.
