I've been making those Brazilian cheesy puffs for years with cassava flour and, after a trip to Colombia during which the importance of flour vs starch was explained to me, ventured into trying the recipe with cassava starch (aka this product... many names for tapioca/cassava/yuca, etc.) and I consider my game changed. Check out this photo for the differences--flour results in dense, compact cheesy puffs and starch results in light, fluffy puffs. A world of difference in the right direction. I am going to subscribe & save this product!

Being gluten-free for over 20 years, I have tasted and tested many flours and starches. Tapioca starch is one of my “go-to” starches. I use it for everything from making Brazilian or Colombian cheese breads to my most recent recipe, a “griddle bread” (think Naan-like):I mixed roughly a ratio of 2/3 of the PuroRaw Cassava Flour to 1/3 PuroRaw Tapioca Starch with some olive oil, sour cream (yogurt will work too), water, salt, baking powder and some cream of tartar and then cooked it on a hot cast iron griddle with olive oil and minced garlic. I added Za’attar and coarse grain salt to each side. Result: a tasty, chewy “griddle bread” that hit all the marks.This starch was easy to work with: very finely milled and not clumpy in any way. The zipper lock on the bag was a bit wonky. So I won’t be storing it in the bag. The price point on this is a bit higher than I would usually pay, but it is organic - so that does come at a higher price.

The package seemed very durable, which I was very happy with as this product is very messy. The flavor was on point and the workability of the product was easy. I don't use the product very often as I just exclusively use it for bubble tea which takes forever. However, if you are making bubble tea, this is exactly the product you need.
