Refurbishes old knives
Chef’sChoice Trizor XV is, for me, an essential kitchen tool. I like sharp knives. We have way too many kitchen knives, some decades old (inherited), others very new, e.g. a few Shun knives. I haven't tried the sharpener on the Shun's and not sure I will. I got the Trizor XV to revitalize some nice Henckle and Victorinox knives that would not take a nice edge using a traditional steel.About a year ago, I got a ceramic for the Shun's, which that works great to maintain the edge on those knives, but the older knives still did not sharpen up. So I got the Trizor XV.After sharpening about a dozen knives, I've gotta say, this thing is amazing. I was able to put a wicked sharp edge on the Henkles and Victorinoxes. The instructions suggest it can take up to 20 swipes of the first stage to put the 15 degree on the edge. I'd say that is accurate. I wasn't counting, but I am sure it was at least 20 for several of the knives. Then stages 2 and 3 just clean up and buff the edge. Just beautiful. Knives are now a pleasure to use.I then tried it on a couple older "stainless" knives. It definitely sharpened them up, but I could never get the "burr" to appear in the first stage. Suggests to me that the metal in the blade is mediocre. Still, made them very usable, but did not provide the edge I got from the better knives.Finally, I tried the sharpener on some other utility knives -- fillet knife, a couple of pocket knives and a multitool. Again, the better the steel, the better the edge.Net is, this may seem pricey for a knife sharpener. But, it depends on how much you value finely tuned knives. I have used a steel for decades, but gradually, the knives just loose their edge and need to be revitalized. If you were so inclined, you could do it by hand using wet stones, which I have done for chisels and hand plane blades. But, that is way too much work.The Trizor XV definitely delivers the goods.
