My noodle loving son loves them
My son loves noodles, so I've been trying to get different types of noodles for him to try. I like that the noodles are made of brown rice and buckwheat flour, making them high in protein. It's also a plus that it comes in a pack of four, very good value for the price. They taste great and don't take too long of time to cook.

Don't Hesitate, Pick Some Up! - Excellent Products - GF Certified!
We LOVE Lotus Foods for all the GF items they offer. My partner has celiacs disease and therefore can’t consume gluten, even a crumb will do her in. In all the years we have been consuming the various products from Lotus Foods we’ve never been let down by their GF certified goods.In the case of this product, their GF brown rice soba noodles, this is about the closest we can get to producing a good pad thai or dan-dan noodle dish for her (although white rice noodles are certainly an option too). For anyone new to rice based noodles, they have a narrower range of cooking/boiling perfection and are less forgiving to cook. However, the flavor is great which offers different tasting notes compared to a wheat noodle. Also, they do not refrigerate well or reheat super well, they tend to get mushy and therefore are best made fresh for each meal. With all that said, they may sound like a pain to cook with but really they’re just a less forgiving noodle that commands you to learn how to cook with them correctly. Again, we love them, myself included who is not celiac.Similar to this noodle product are their millet and brown rice ramen noodles, also GF https://amzn.to/3Fj9Aez . If you take a liking to the Soba noodles, definitely give the Lotus ramen noodles a try for thinner, lighter noodles in soups like pho or obviously ramen. Both are in the same vein flavor-wise.Again, we’re so glad that Lotus Foods is consistent with their adherence to GF so my partner can enjoy the same meals (except noodle modified) that non-celiacs get to enjoy. Whether you need a GF noodle or are just in the market to try something with a flavor profile that is different from a simple wheat noodle, I’d highly recommend you give these a try, or anything from Lotus for that matter. taste great, perfect for stir fry
I usually eat the rice ramen noodles from lotusfoods but wanted to give these soba noodles a try as well. They're a little bit thicker than the ramen noodles so they maintain their chewiness better and also hang on to sauce better as well. I think if you're looking to fry the noodles these are definitely the way to go. The package says to cook them for 7 minutes, but I'd recommend cooking them a little longer especially if you're going to add to soups or broth. No complaints, its a great tasting gluten free alternative noodle

Good alternative.
I ordered the Lotus Foods Organic Soba Rice Noodles - Organic Rice Noodles, Asian Noodles, Rice Noodles Gluten Free, Brown Rice & Buckwheat Flour, Perfect for Stir Fry, GF, Vegan, Non GMO - 8 oz (Pack of 4), and I'm happy with them. We can't have gluten here and love pasta, so we are always open to trying different kinds. I've had this brand before and I've been happy with them, and I'm happy with these. It is a pack of four of long noodles, and they are a little bit shorter the typical longer noodles that I buy. They are also a little bit different than typical white rice noodles..It says they cook at 7 minutes, but I had to cook them for longer. It might have been because I made two packs at once. I made sure to stir often, and I always add a little bit of oil to my pasta water so they don't stick as much. I then rinse with cold water and they were ready to go. I thought they were good. If you are familiar with most gluten-free noodles like this, you'll notice they can be temperamental. Sometimes it can be difficult to get them just right because they are easy to overcook and can get mushy. Reheating them can be a big problem too. I just always set a timer when I'm cooking them and try to watch them often. Overall, I'm happy with them and if you are careful with your preparation, they can be great for an alternative and good in pho, thank you.

These organic rice Soba noodles are delicious. USDA organic, verified non GMO project verified, vegan, gluten free, and great tasting. I love tha it only includes 2 ingredients - organic rice flour, and organic buckwheat flour. Cooks quickly and packs plenty of fiber. Noodles keep a nice consistency even in broth, with a slight chewy texture. Lot number and expiration date listed on back, mine had a 17 moth shelf life, so plenty of time use it. Good quality and value for price, and made by a planet conscious company.
