Q: Can you attatch them to each other for a two handed rig?

There is no easy way to do so, you need to do some DIY to attach them together, the item has 2 hooks, one in the front and one in the back, and using some cable ties or anything similar, you can manually attach 2 this way.

Q: how sturdy is the phone mount? Should one be bought separately? This is the only reason I am purchasing.

The phone mount is an average quality, if you pick the 2 packs option, that phone mount is sturdy.

Q: I understand the cell phone mount. What is smaller mount that looks like a knob? (maybe the "compatible mount"?)

The one that looks like a knob is the GoPro mount.

Q: How do you attach a camera

The stabilizer has a standard 1/4" screw for DSLR at the bottom and on the top, you can have your camera at either places.
