Is there a way to tell what the new color will be before you change it with the marker?

Yes. The barrel of the marker is one color and the cap is a different color. The barrel is the color that comes out first, the cap is the color that is revealed when you go over it with the white marker.

Do you need special paper?

No. Any paper works but white paper is the best.
