Trying to decide on what capacity i need. 160gb or 80gb. how much storage does the a7s iii need ?

I would suggest getting the 160GB version. Actually, if you can, get two. You need these cards in particular for 4K@60 or 4K@120 video (or 8K@30 on the A1, which is equivalent to 4K@120 in terms of storage requirements) - you can use a regular UHS memory card for lower video settings. You can record about 30 minutes of 4K@60 video on a 160GB CFexpress Type A card. Other combos are pretty easy to do the math on based on that. For example, if you were shooting 4K@120 with a single 80GB card, you'd only be able to store about 7.5 minutes of video before running out of space. So if you populate both slots on the A7S3 with 160GB cards, you can record about an hour of 4K@60 video.

will this let me record in 4k 24fps on my FX3? Also can I record slow mo on the fx3 with this?

I suppose this is designed towards video right? A mainly stills photographer won't need this expensive card?

If you use the Sony A1: this is the only card you should consider to get the best out of this sophisticated camera. If you want 30fps - you will need this card. They are better, robust and the right thing to do if you've spent the money, getting the A1.
