Could you possibly screw the hinges on at the bottom of the stove so it wpuld open like a real one?

Maybe....but I wouldn't recommend it. It is for safety reasons that in all play kitchens the stoves opens like that. So the kids could not clim on it.

Is there a trick to screwing in the screws to the gold handles? It’s my second box I’ve ordered and non of the screws fit into the handles/pulls.

They cut into the plastic as you screw them in, they are just tight. I used my impact drill vs a hand screwdriver.
