I would say 8 to 10 depending on the pattern. For a 6x8 feathers and fans afghan I made that fits a queen/king I used 8 plus two more for the border.

It depends on how tight or loose you crochet or knit...but you can get a good size receiving blanket out of 2 skeins. I made a comfort blanket for my granddaughter out of 1 skein. It's not big enough to cover with, it's just enough for her to hold onto while she's sleeping or when she gets upset. I hope that helps.
