Lovely product and company.
First time I tried walnut flour and it definitely wont be the last. It seems a very versatile product. I have so far used it to bake a spiced apple cake and also mixed into my morning porridge. Both tasted brilliant.I would highly recommend buying from Erbology. I have always found their products to be premium quality, well packaged and fresh. Furthermore always replies quick to any questions, they really seem to care about their customers.

Do not buy, not nut powder!
I do not know what this is but it most certainly is not pure walnut flour. It tasted like ground tree bark, no nutty flavour or fat, just weird fibrous tasteless texture. Bought 2, used the first to cook a Persian dish which after 4 hours of cooking was completely inedible because of this horrible product. Threw the second one in the trash. Should not be sold for human consumption.

Behaves like regular flour, but with a subtly toasted taste
Walnut flour was new to me, and I expected it would be similar to coconut flour, with lots of bulk and requiring lots of eggs. In that regard it's not as extreme as coconut flour, it behaves much more like normal flour, for thickening and baking. The taste is also more subtle than coconut flour. In my first test, my kids noticed something was different in the brownies, but couldn't quite put their finger on what it was (I used 2:1 plain to walnut flour), but they ate it all up, whereas with coconut flour they openly said they didn’t like it.I really like the taste- it’s only a shade nutty, and a little toasty, with a roasted tinge that’s very slightly like coffee, or at least coffee cake.At only 300g in a pack, so you don't get much in a pack for baking if you end to use it exclusively, but it’s a fine pack for thickening and occasional tablespoons.2kg of walnuts is used to make 1kg of flour, which seems a bit indulgent bordering on wasteful (I might rather just have the walnuts!), but if you have to avoid wheat, it makes a good flavourful alternative. The walnuts are harvested in Romania, and the lengthy credentials include '100% organic, cold pressed, defatted, no additives, non-GMO, small batch, sustainably sourced, single estate'. So it’s environmentally fairly low impact too, that is until you pour in the cocoa powder, sugar and fat to make brownies…It’s interesting to use, but quite tasty. If you absolutely require it for your diet (for gluten reasons etc.), then the fact it tastes quite a lot like normal flour may be a plus point. Otherwise though, it is an expensive alternative that doesn’t make the largest of differences.

Great
Great product - very strong taste of walnut so only a small amount is necessary. I’ve made genoise sponge, bread and cookies with it and it all works wonderfully.

Expensive and unpleasant tasting!
Are a mistake buying this as though it was Walnuts! However, would have cost too much to send back, so percevered and made some Cakes. No, they were unpleasant tasting and heavy. Wouldn't buy again.

Disappointing
I use this walnut flour to bake a cake following a recipe specifying walnut flour (Walnut flour, sugar, butter, eggs, coffee and vanilla flavourings, raising agents). Unfortunately the result was not very successful. The cake was dense and heavy, and the flavour not particularly good. Given the high price this is disappointing.

Organic Walnut Flour
I am disappointed with this product. It doesn't look like nut flour. Here the nuts were ground together with shells. The result is not walnut flour, but a very tough mixture.

Low carb flour,
I’m not a bread eater but, once in a while I like a wrap or pizza. I decided to experiment with walnut flour, had never tried it before. Made some awesome flat bread, 4 out of 1/2 cup of walnut flour........ taste great, good texture and low carbs.
