Such a Treasure
This is my first review on Amazon ever and I needed to share how much I love this cookbook! I'm picky with cookbooks but I love Anne-Marie's blog and all the wealth if information she shares about zero waste living so I knew the book would be a gem no matter what. That said, this is a gorgeous cookbook. Beautiful photographs, wonderfully thick paper, easy to follow recipes with suggestions for using leftovers in a, "and now for your next recipe..." section. The beginning of the book has detailed information about zero waste living and getting started, how to freestyle cook and keep your food fresh longer, how to culture foods, how to stock a sustainable pantry and kitchen, and then sections for recipe staples and ways to use kitchen scraps, breakfasts and breads, sides, mains, snacks and natural sodas (I've got my ginger bug brewing!), and desserts, plus a month of meals at the end of the book.This is a serious treasure for zero waste beginners and those already on the path, for people wanting to eat healthier, and for people trying to be more frugal with their food bill. I've made the sourdough tortillas and they are the first tortillas I've made that actually tasted good! So soft and delicious. The kids loved the too. Ditto on the sourdough brownies. Fudgy and rich. I have to eat a low-fructan diet and both of these recipes use sourdough starter and ferment for at least 24 hours (up to 5 days for the tortillas), making them much easier for me to digest, in moderation. I've got dosa batter fermenting as I write this. My boyfriend's family is from India and we love dosas for breakfast with chammanthi so I'm excited to make it myself. The sweet and savory sourdough pancakes were delicious and devoured by all of us and, again, are using sourdough starter that's been sitting and fermenting for a longer period and easier to digest. I can't eat a ton of these foods at once but I'm excited that I have these options and don't have to make separate fructan-free options for myself when cooking for the family.I could go on and on about how much I love this cookbook. I've got an extension collection of cookbooks but it's become a fast favorite. Thank you Anne-Marie!

Terrific book from a chef of great integrity and creativity
As a point of information, I first met author Anne-Marie Bonneau in 2006 at a local Voluntary Simplicity meeting after I had moved into an intentional community. Turned out she already lived there! So I was privileged to see her move ever-deeper into her subject, begin a wonderful blog and eventually produce her first book. And what an excellent book it is. Subtitled "Plant-Forward Recipes" there is something for ALL eating preferences. And there is SO much information here, all written in a comfortable, homey style, that it's a good idea to start reading from the beginning then see where she takes things from there. Each delicious recipe is treated to a unique lay-out. Introducing the recipe will be a short section giving tips, substitutes and extra side information. The recipes, themselves, are well written and include measurements in BOTH American cups and ounces as well as European weights and measures. At the end of the recipe is a really cool feature called "And Now for Your Next Recipe..." with further tips and pointers to nicely-related recipes elsewhere in the book. All of these painstakingly-developed recipes are delicious, well-thought out and accessible. I happen to know there are a great many great recipes that were not able to be included in this bookdue to space constraints, so I'm hoping there is another book coming! I whole-heartedly recommend this book as not only an excellent cookbook but as an informed and useful resource for people who are interested in lowering the amount of waste in their lives and living well but more lightly upon the earth. Oh, and lastly I want to recommend Anne-Marie's wonderful blog at zerowastechef.com. It's delightful - besure to read from the beginning and watch her inspirations develop!

Delicious ways to use your food !
At the end of each recipe, there is a suggestion of how to use any leftovers. This way of cooking saves you money and time because you use everything!! I made Ginger beer and my friends are delighted and amazed. The truth is that it was easy !! Anne-Marie encourages progress not perfection ! I can make a difference right here and right now for our planet and our future. (and it saves me money and effort)

So many new ideas and recipes!
This book is fabulous! I have learned so many ways to use all of the glass jars I have been saving and I love the flexible recipes. I feel excited to make changes to my cooking that result in less waste. The author tells some very relatable stories about cooking and life. I volunteer at a food pantry and I have learned quite a few ways to stretch my own food and encourage others. Mexican Hot Chocolate Bread Pudding, for example, is a great way to use up some stale bread and the recipe for corn soup has tips on how to use the whole ear of corn. There are some very adventurous recipes, as well! This is a fun and useful book!

Excellent help to reduce waste
This book offered so much useful and practical advice to reduce waste that, having borrowed it from my library, I decided purchase a copy as a permanent reference book. Since my biggest struggle with reducing waste is in my kitchen, I found the recipes plus one more just what I need.

Excellent value
The information in this book goes beyond the simple cookbook idea. Anne-Marie gives realistic guidelines to help you reduce waste in your kitchen. The different chapters are layed out well, and everything is easy to understand. The recipes are fun, and delicious. I highly recommend this book!

Really useful recipes
I really liked the variability of the recipes, and the use of what i would normally toss, to create unusual ferments. This is becoming one of my favorite cookbooks.

A must have cookbook!
Such a great book! Important and easy to implement advice for anyone looking to reduce food waste, save some money and ditch our plastics habit. Smart, funny and well organized - I highly recommend this cookbook!
