Good build quality. Very heavy - I list that as quality as the pan distributes heat evenly throughout.The handle definitely needs to be a larger diameter, triangular in shape, with a rubber grip. If you are lifting a pan full of sauce, this pan may tip on you. A lift point or handle on the far side of the handle would be helpful.Today I made pancakes from scratch for the first time. I turned the heat up to what I used to use with my non-stick pan. Turns out this pan is VERY efficient at moving heat from the stove to the food - I wound up filling my house with smoke from the oil and burned a heavy layer of yellow varnish onto the pan. This is entirely my own fault - I just didn't know how good the pan is. Hopefully I save someone else some grief.I saw another review that said the pan is less than 12". This is not correct - the pan is 12" at the top.

Its WONDERFUL!!!
I've had these 2 pans for only 3 weeks now and have used each pan about 3-4 times each week. They still look exactly like the pics on and Amazon website, beautiful, sparkling, new and shiny (thats why I did not include a pic). They cook beautifully and nothing seems to stick to them. I preheat them on medium heat before adding items I want to saute' (onions, other veggies, meats, etc.) and if it does stick slightly, when de-glazing the pan w/ liquid (water, broth, wine) the wonderfully tasteful bits that stuck come right off and flavor the dish I am preparing. My only negative is: I SHOULD HAVE PURCHASED THESE YEARS AGO !!! (if they had only been available back then!). DON'T WAIT! REPLACE YOUR OLD NON-STICK PANS WITH THESE AS SOON AS POSSIBLE!I have had a new gas cooktop installed (replacing very old gas cooktop) which is an upgrade, similar to a professional gas range. This was done just a few weeks before getting these new Analon pans. The new cooktop has 5 burners one of which is a giant very hot burner, one large burner, 2 medium burners and one very small burner. All of these burners cook hotter than my generic sized OLD cooktop so the learning curve of this new cooktop with my old cookware was taking some time. When these new Analon pans came I was afraid that the combined learning curve of both the new pans and the new cooktop would be more than double the difficulty in time needed to be able to cook w/o burning meals. NOT SO!!! THESE NEW PANS HAVE MADE THE TRANSITION TO MY NEW COOKTOP A WALK IN THE PARK!!!THANKS ANALON AND THANKS AMAZON! LOVE THESE PANS!!!

Tiny Base = Design Flaw & Disaster Waiting to Happen
I ordered the 10 piece set of Anolon’s “Nouvelle Copper.” When the pans came I unboxed them and lovingly hand washed and dried each beautiful piece. As I dried them, I noticed discoloration in the copper, along the seam, where the disk/base attaches to the pan. The discoloration did not wash or polish out because it is a permanent discoloration from heat used to attach the bottom piece to the pan. I was disappointed because I want my new pans to be pristine and not flawed but thinking this was only a visual imperfection.Unfortunately, the 2.5 qt pan won’t even boil water. I quit trying because I don’t want to risk shattering the glass stovetop from the heat around the pan. The base that comes in contact with the stovetop is too small for standard burner sizes. I have taken pictures of the 2.5 qt saucepan as an example. The contact point of the base/disk is only 5” in diameter when most small standard burners are 6 inches. With the2.5qt pan with 5” base on the burner, the 6” stove eye turns on, gets hot and cuts off repeatedly because the eye isn’t covered. The area around the pan gets too hot, fast, even before the eye cuts off.The disk/base is angled and it could cause a disaster for someone. The part of the pan designed to take the heat isn’t all that’s getting hot. The “bands” of stainless, aluminum and copper are getting hot along the edge. The enclosed safety information states, in all caps, “THE ALUMINUM CORE MAY MELT AND SEPARATE THE BASE FROM THE PAN RELEASING HOT MOLTEN ALUMINUM . . .” I read that another reviewer had this to happen. The safety information also advises to “Match Pan Size to Burner Size.” Who has a 5” burner?The only type of burner that this set of pans would safely work with is an induction stovetop. This is misleading because it is advertised to work with all types. Even the packaging states “Magnetized stainless steel cap ensures compatibility with all stovetops, including induction.” yet it would only safely and efficiently work on induction.The handles on the pans are riveted. The handles on the lids are not riveted and appear to be pressed. The last picture is of the inside of the lid.Although the pans look pretty, they are not functional and I am returning them. It is going to be a major pain for me to fit all the pieces back in the box.

Decent but the weight distribution on the 1 1/4 quart pot is off causing it to tip over when empty or when a small amount of food is in there. Had I realized it earlierOn I would have returned

Not meant for flash cooking bachelors beware!
These seem to be high quality cookware. I haven't had any separation issues as mentioned by others and a frightening possibility at this price point! I bought these because I needed new thick base cookware as my ex kept my Le Cruset. Not as easy to clean as the enamel wear but with butter or spray oil and immediate cleanup afterwards I have had few issues. I use baking soda as my scrubbing additive -HINT, HINT - it doesn't scratch surfaces and helps food and stains release easily. For those who complain about the copper changing color... what do you expect from actual copper. My revere ware has grey spots on it too but they are great for boiling water aì of pasta etc these are NOT intended for high heat as used to boil water. They are to distribute and hold the temperature you need for cooking foods evenly and deeply vs flash in the pan Batchelor style cooking. That's why they like grilling! LOL Oh, well you can't teach all of us guys how to cook correctly, nor a lot of young ladies either.
