Mercer bpx 8" breaking knife is an essential meat processing tool
I work as a meat cutter, spending many hours breaking down and portioning primals. This 8" mercer bpx breaking knife is a favorite of mine. The hard steel keeps and edge well at 15 deg. The handle is very comfortable for long use. I prefer the Mercer handles to most other knives (F. Dick ergogrip are very comfortable and durable as well). I also use the Mercer bpx 10" breaking knife, Mercer bpx 10" American style granton Butcher Knife, and several Mercer boning knives. Mercer offers great value comparatively.

Perfect for cutting meat!
This is my best knife for cutting up meat. A must have and price is affordable. I stopped buying other expensive brand knives that lose sharpness quick.

Great knife
German knives have always been made of good steel. This is no exception. I enjoy using it. It is comfortable in the hand. Stayed sharp for several days now. I hit it with the steel every once in a white. At the end of the day it is still going. I enjoyed it so much I bought the Mercer Culinary Mercer BPX, 10-Inch, Cimeter M13610 as well I used them everyday all day long great knives.

Great knife, super sharp, good grip and feel.
Wow, super sharp, great hand feel, makes quick work breaking down and trimming large cuts. Just be careful and ware protective gloves. Did I say super sharp?

Awesome carving knife for the money
I have come to realize that the price of knives matters more about beauty and craftmanship than actual function. I have used straight blade high-end German carving knives for years, thinking they were the best but I always saw butchers using curved, stainless knives. I finally got frustrated and figured i would try an affordable one and it is amazing. Its no frills but functions great and holds an edge. I have owned it for a few months and haven't even had to sharpen it yet. I just run it across a ceramic honing blade once a week and it has stayed razor sharp. No so with German carving knives that I have to sharpen twice a month with honing in between. I cook several hours each day so my knives all get used heavily. Today I used this knife to debone and cut up 10 chicken thighs and it did a great job. I break down chickens with it, clean up and cut whole beef filets. Has done well on any type of whole cut meats. It will slice tomatoes, although I like small serrated tomato knives for that. It is not meant for chopping vegetables but you could probably get away with slicing them in both directions if this is one of your only knives. highly recommended.
