Victornox boning knife
This is one awesome knife. Victornox is always a high quality knife and I own several. This one is no exception. It’s super sharp out of the box and holds its edge extremely well. I use it for lots of meat preparation at home and I am not disappointed at all. It fits well in my hand and is comfortable to use. It’s worth the money!

Holds a very good edge and very comfortable to use
if you’re looking for a great knife this is the best buy for your money for sure. This thing is straight, razor sharp and works great very comfortable in hand. I will slowly put together an entire set.

Very sharp
Saw this on a YouTube video of someone butchering meat. It is very sharp and really good for breaking down large cuts of meat. Due to the shape, it seems great for that purpose. Seems to hold an edge. The blade is stiffer than a filet knife but somewhat flexible, again, seems great for large cuts of meat.

Great Knife
This is a very nice knife! It came extremely sharp! It fits well in the hand, so is comfortable to use. I bought after watching a few YouTube videos about good knives to use when trimming brisket and decided on this one. I’m very happy!

good, practical value
I bought both the 6" and 8" boning knives. They don't look like high quality workmanship since the blade is punched out from plates, instead of forged. But they are sharper than they looked. They do cut nicely, easily separating the meat or fish with only one cut. And they did well on my paper shaving tests. The blades are straight and thin. They are somewhat flexible as boning knives should be. The only defect I found is that there is an obvious gap between the blade and the wood handle on the 6", as also mentioned in another review. My 8" is much better without obvious gaps. I did not give a five-star rating because of the wood handle.

Amazing knife for the field
Have used several different styles of higher end knives to field dress, quarter, and butcher a deer. This by far has exceeded all of them. Good quality and stays sharp. I have done 2 deer so far this year with minimal to almost no sharpening. Highly recommend
