Meat Dept. Worker (5yrs)
I bought this knife I wanna say a few weeks ago, and very thorough use, i wanna give my honest opinions as a meat department worker (5 years of experience). First of let me tell you about the functionality, it is fantastic in my relative experience. If I have to debone a pork shoulder, or I got to debone a beef shank etc. it has like the perfect amount of flex to get into the curbs of the bone. I sharpen the knife I wanna say at least once a week on a 1000 grit diamond plate, just to maintain the edge I have yet to do a full on sharpening as I find that the edge retains quite nicely. I will say this, because this is 400 series high carbon stainless steel, it makes edge maintenance good, but it does make it a bit more susceptible to knicks on the blade if dropped from say shoulder height (about 5 1/2ft). But it’s been an amazing knife so far it feels great in the hand very light weight, and amazing price I’ve had victorinox 6” inch fibrox and I would definitely chose this knife over that one. But that’s my personal preference. I definitely will continue using the Dexter-Russell brand for a while.

Worth it
I bought this knife specifically for bleeding rainbow trout. I say that because I was looking for a small pointed blade that was thin at the tip. If you're looking for that, it's great. Well built. Razor sharp out the box. It's a dexter, so I figured that much. Handle feels nice when cleaning the trout. Blood cleans easy [I've always cleaned it within 5-10 minutes after use] only thing is it doesn't come with a sheath as is stated. I used a piece of a 30-06 ammo box and made a basic blade protector so I don't slice my hand up reaching in the tackle box.

If not for the poor edge retention, this knife would be perfection. It's still plenty useful and the ergonomics are phenomenal.

Very sharp
This knife right out of the pack is very, very sharp. I skin a cape deer during the hunting season in South Georgia. I caped out over 150 deer and skinned over 1200 with this knife. Sharpened it one time. Exactly the knife I was looking for.

Great Knife! Well made, razor sharp & easy to sharpen
We bought two of these knifes to help us process around a hundred meat chickens 8 - 12lbs. We cut A LOT of chickens up this past week using these knifes and honestly they worked better than expected. We abused these knifes and used them for several consecutive hours over a three day period of constant use. I like my knife super sharp so I found I'd have to re-sharpen the knife about every 10 - 12 birds. They sharpen up fast and only took a minute to sharpen right back up to a razor edge! Also, over the three days of processing our chickens these knifes were constantly wet, getting washed after every chicken and we didn't see or get any rust spots on them. Handel was also great for gripping, slip proof and I liked the overall size of it for what we were using it for. Cleaned up well after and now sit in our kitchen and my go to knife for cutting thin tomato's.
