Q: Do these come with cleats?

yes, with the SH51 (single angle release) cleats. I highly recommend the SH56 (multi-angle release) cleats, especially if you are new to clipless pedals!!

Q: Can I order these with the SH56 cleats included

No, I do not believe so. I have only seen them come with the SH51's. I had to order an extra pair of the SH56 cleats, which I highly recommend by the way! I had a few crashes with the SH51's where I didn't come out of the pedals... In one instance grinding my rear Carbon CC triangle into jagged rocks from the weight of my body attached to the bike as I went down. Even with Santa Cruz's "crash protection" it cost me $1k to replace it.... haven't had an issue since rocking the SH56 cleats!

Generally any shoe that is 2 bolt SPD compatible will work.
