Santoku knife
Pricey, but a very fine knife. Made in Germany. Fits well in hand and cuts very well, vegetables & fruits. Holds edge well.

Love the knive
Great knife, and I love the Santorum design. I use it every day for slicing and even chopping, even though I have a complete set of Zwilling Professional knives in the block. Arrived sharp, but not dangerously so. Sharpened at a 15 degree bevel, so we’ll see how the edge holds up.

Great knife
This cost more than I would like to spend on a knife, but I wanted a quality razor sharp knife and I now have one. I even christened it by cutting my finger within the first couple of times I used it. It's deadly. I don't feel like messing around with a food processor so I needed a couple good slicing knives to handle the fresh foods that I prepare. After researching, I decided to stay in the Henckels line. I already had a Santoku and kitchen knife by Henckels but wanted another Santoku after discovering someone had put little knicks in my blade. (none of my boys ever fessed up) I prefer the Santoku over the kitchen knife just because it's my personal preference. I like the feel of it better, although I do like the kitchen knife as the blade is slightely curved which allows me some rocking action when chopping fine things like herbs. So now I have a high quality veggie knife, and the old knicked santoku and kitchen knife which are still sharp which I use for meats and miscellaneous jobs. I love cutting with a sharp knife. It makes me feel good. It's a good buy, and the knife will probably last as long as I do. I also purchased a good sharpener to keep my knives sharp.

This is my favorite prep knife!!! Used daily!
I bought this same knife about 15 years ago and used it every single day because the blade is amazing and everything about the knife was perfect for my daily needs. But it also went through the dishwasher that whole time so after about 13 years the handle started to slowly fall apart crumbling a little more everyday. Once it had fallen off enough to no longer be comfortable to be used daily I went ahead and finally bought a new one. It is an expensive knife but totally worth it to me and lasts a very long time!

Sharp but not great quality
I am a home cook, and I received this very expensive (for me) knife as a gift. I was surprised at the quality of such an expensive knife. The knife is sharp. In fact, it is probably one of the sharpest knives I have ever owned. However, the blade does not seem to be evenly sharpened. I have not and will not put this or any other knife in the dishwasher, so I know it is not due to that. The handle also seems to be cheaply made and doesn't really fit well in my hand. The knife is sharp and light weight. It is easy to use, but not of the best quality.
