Q: How long does it take you to dry your salami with these casings and humidity around 75 - 80%?

The two inch takes 2-2 and a half weeks or ph of 5.2 with pork.The three inch is going to longer I have one hanging now in at about 60 degree room will know more in 2 weeks. I also smoke with the 3 inch If you dont want to wait 3 weeks you can smoke it. But that is a different kind of salami.I hang most of the salami I make.

Q: How many pounds of meat can this cure? I am looking to make 5 pounds of salami. Hoping to make 2-3 logs, not one large log.

This size will stuff about 3 lbs and will be about 3 inches in diameter we also sell a smaller size in mahogany color that will stuff 1.25 lbs and will be about 2 inches in diameter- the description for the item says 25 pieces for 35 lbs of meat

Q: Can these casings be used to dry cure in refrigerator ?

YES but the two inch would take less time about two weeks You have to poke holes up and down the whole salami 3inch is going to take longer.Natrual is better salami casing for dring .

Q: Can these casings be used to make and boil haggis?

We would not recommend these for making haggis which is usually made in an intestine but you could probably use a collagen casing as well
