Q: Does this have protection for the smooth bezel on Datejust 41?

Yes I believe so. There is one piece that is circular but it is cut in the center. I am guessing it is for easy application. Can use it on the back side or on the bezel.

Q: Can you do a wet install on this adhesive? Spray water on the film then apply to better position the film before its sticks to the watch?

yes. i sprayed on film and on the watch. also using warm water makes film more pliable, as a last tip try using distilled water.
