VERY GOOD YEAST GOOD PRODUCT BUT A LITTLE BIT EXPENSIVE
I bake bread very often and have purchased several types of instant and active yeast... the big difference, in my personal opinion, is that this yeast works extremely well with the flour.That is, it's more potent than the others, but so is its price; it's not as cheap as the others.But at the same time, you don't need to use an entire packet to make a loaf of bread; just a couple of grams for 1.2 kilos of flour is enough, and I'd venture to say that just a pinch of it is enough.Some people believe that because they use more yeast, the bread turns out much better, but what they don't know is that they're eating yeast instead of bread... and all this perhaps because it helps the bread rise faster.Everything has its time.That is, if you make bread and don't give it the time it needs to develop, then you'll end up with a stale bread.However, if you use too much dry yeast, which is much stronger than compact or fresh yeast, then what you'll end up with is a dough that rises super fast in just a few minutes, and you're speeding up the rising process.So, for everything to be understood, it takes time and patience.And I repeat, it's not necessary to use 8 grams of instant or active dry yeast for half a kilo of flour; just one gram is enough... give the dough time to rise, let it do its job, and then move on to the rest...Rushing when making bread isn't good, and many people overuse YEAST.This isn't very good, to say the least. I've seen videos that use 8 grams of dry yeast for 400 grams of flour, which is AWFUL. No matter how cold it is in your country, state, or province, or wherever you live, you shouldn't use that abysmal amount for 1.2 kilos of flour.Dry yeast is super strong, and the calculation is correct. If the recipe calls for 1 kilo of flour, 2 to 2.5% fresh yeast, in other words, 25 grams, and at the same time, with only 6 or 6.5 grams of dry yeast, you have enough... that is, a third compared to compact or fresh yeast.But here with this type of yeast, which is much stronger than the others, I would say that in 1.2 kilos of flour, one or two grams is super enough... I’m fairly new to bread making. I’ve made a few loafs that were good but not great. This time I used bread flour and thought I’d try the Red Star Platinum yeast. The bread rose higher and the taste was so much better. This will be the only yeast I use from now on.

Superior Product
I won't even think of baking bread unless I have this available, and it is getting more and more difficult to find this product. The rise is far superior to the regular yeast packets, even in the Red Star Brand.
