How much do I need to spray a curtain that is 3 yards by 10 yards with two coats?

Not sure about that, but I do know that we used one full can to spray 4 outdoor seat cushions. I just recently bought 6 cans to do a new couch with two coats.

Can you use this to make cloth shower curtains waterproof?

We would recommend checking the cleaning codes on the item and preforming a colorfastness and texture change test first in a discrete area. Is Scotch guard a plastic coating

No, it permeates the fabric. As you wash the fabric a few times, you will need to spray it again.
