Q: Does this mixer work well with other doughs such as cake mixes, cookie dough, etc?

Yes. It will do it all. It doesn’t have a slow speed so if something requires stirring or folding - you will be out of luck.

Q: How loud is it? Approximate decibels? I'm asking mainly becasue I like to make bread while everyone else is asleep

Its made for power, so it's on the louder side with Bosh and KA 600. For a quieter mixer, you'll probably need something in the 300 watt range (this one has 900 watts).
