Bob's Red Mill is my go to brand for stocking my pantry, from grains and seeds (quinoa, chia, flaxmeal, millet, ), flours (almond, garbanzo, rice, cassava), starches (tapioca, potato, arrowroot) and baking additives (xanthan gum, baking soda and powder), but coconut flour definitely makes my top 5.I have tried many brands of coconut flour, but I always go back to Bob's Red Mill organic coconut flour. The quality and flavor is simply unmatched.It works perfectly for many recipes: pancakes, waffles, microwave mug muffins. Combined with almond and other gluten free flours and starches is makes the perfect baked good, muffins, cupcakes, breads, crackers, crusts (pizza, pie, quiche).The flour is fine and very absorbent, I feel it needs slightly more liquid in recipes compared with other brands.The coconut flavor is deliciously pleasant, with the versatility of enhancing the taste of both sweet and savory recipes. It's tasty, without being overpowering. The smell alone from the bag sets my taste buds on fire.The only thing I have a slight complain of is the packaging; I would prefer a classic zip lock, but I do end up transferring to an airtight container.It keeps best quality in a dry cool pantry for 1-2 months, otherwise I recommend storing the flour in the freezer or fridge.

Trying it out!
I tried using coconut flour. Since I already like shredded coconut flakes and coconut milk, I thought I would like coconut flour: but it’s very different smell and tastery

Natural and gluten free
I found a recipe on the back of Bobs Red Mill Almond flour, for an extremely moist cake with almond flour and coconut flour, so I thought I would give it a try. Cake came out very moist, indeed, but I didn't care for the texture and It did not raise much at all.I do make gluten free cupcakes and pancakes, which I love and even my friends who try them love them. This didn't happen with using coconut flour. The flour itself is very fresh and I must admit that I have not tried it before in a cake.
