Best flour. A little pricey, but the flour made the cake so fluffy and light.

Ideal Flour
A neighbor of mine started using French flour because it Europeans ban ingredients that are used in American flour. Also, American wheat is picked before it ripens to maturity, so we have autoimmune responses to domestic flour. First, I made cookies, which came out great. Then, I made Irish soda bread. The flour was wonderful. I can use it without worrying about health damage.

Delicious fine flour
I bought this flour to replicate Dominique Ansel's madeleine recipe. My results have been perfect every time - super light and fluffy. Airy, cakey and sweet. I use Bob's for everything else but this will be my go to for my madeleines and waffles.

Good but pricey T55
A little pricier than the brand I usually get. It's good though. I like the pour spout & being able to close it back up.I go through too much flour to afford this one, but that's my major only complaint. A minor one is that this doesn't show that it's T55 anywhere on the box.
