Q: Is this pasteurized ?

I don’t think so. As soon as I open it I put it in the fridge . It’s content can ferment and go bad. Leaving in fridge even for several months I have had no problems I use it mainly on fish but it has a variety of uses.

Q: How can you tell if this product is spoiled? There is very little difference in color than the red miso.

White Miso is combination of soy beans and rice. Since it is fermented much shorter than red miso, the color is lighter than red miso. It has a mild, slightly sweet flavor. Red miso can be fermented for over a year and has bold flavor. White miso has more rice while red miso has more soybeans. I keep it in freezer, it last for months. I've never had spoiled miso. Thank you

There shouldn't be... But I do not know for certain as all the print is in Japanese You could try looking up their website for more specifics Sorry not to be more helpful... : )

Q: am I supposed to refrigerate this product as soon as I get it, or after opening it?

I always refrigerate it as soon as it arrives as I had one that I didn't, and it developed a whitish mold on the surface. Since then, I refrigerate immediately, and it lasts for months with no noticeable degradation. It will make, by the way, a truly delicious white miso soup, oh my!
