Pals, this stuff is incredible. I’ve been a wizard in the kitchen since I was a kid, then I was diagnosed with celiac in 2016 (what a year). I have been relearning how to cook and bake everything since then, and this ingredient has made the single biggest difference in my baking. As a general rule, I sub a half-tablespoon of 1-to-1 flour for Expandex, mix it with the dry ingredients really well, and I usually let batter/dough rest for a few hours in the fridge. It makes a huge difference, and I wish I had bought it years ago.

I used some in a apple pie that had a runny filling the tapioca flour wasn't cutting it. It worked great. how ever they don't give you any ratio to use. so i experimented i used about 4 oz. of cold water and a 1/2 teaspoon of ultra-tex. and shortly after had a loose gel added another 1/2 teaspoon and in a hour it had a stiff jelly like consistency. never used this product before so you will have to play with the amounts.

This was not the product I thought it would be. You have to use a great deal of the stuff to achieve your goal

I use Ultra-Tex 3 as an additive to my gluten-free doughs. I love it! (But I wish it came in a bigger bag)

Added authentic texture to my gluten free cinnamon rolls,excellent results.
