Functional and sharp knife.
I bought this knife to add to my Shun Kanso set. I love these knives. Sharp, durable, and the design is what I like: understated and functional. This particular knife is perfect for filet and de-boning. The blade is super sharp. Cuts effortlessly.

great boning knife for professional chef.
Best boning knife I own. The blade stays sharp for a long time. Handle and weight feels good in the hand and it’s beautiful to look at. The only I have to do is find a knife cover that can hold it. The curve makes the tip of the blade sticks out and has cut my knife slot in my knife bag. Buy over all love this knife.

Simple, great design, super sharp
Love it. Not the top of the line Shun but a fantastic workhorse of a knife. Worked great for trimming out 9 lbs of venison for jerky. Comfortable in the hand, super sharp and great price.

Good for home cooks but aus10 hard to sharpen
I'm a professional chef and use this knife to break down small fish and beef tenderloin, the knife preforms well holds edge for a long time, no flex at all. What I don't like about the knife is the handle, very uncomfortable and hard to clean, if you use the knife often and clean it offen the wood starts deteriorating and gathering filth

It's sharp out of the box, and looks great too!
I bought this for my husband for Christmas because he likes the Shun knives and we use them in the kitchen all the time. He liked this style based on using one at a friends house for carving a turkey. It is a great looking knife, and does come very sharp. Sharp enough that my husband naturally cut himself pretty good on the first use. It may sound bad, but he does that more often than not. We have stock in Band-Aid if that tells you anything. ;)Love the knife myself, and it has great everyday use in the kitchen beyond just a boning knife. Recommend this style of Shun as we have the pairing knife too. they stay sharp for a long time if you use steel to hone it occasionally. Good buy in my opinion!

Well made Japanese knife. Spend a little time with a quality sharpener and this blade will become razor sharp and last for years to come.

Excellent!
Have used this a couple of times now (removing meat from whole turkey breast sections). Does a great job, as do all my Shun knives. Feels good in the hand too.
