yes, this product is sourced from China

Q: Can this be used on a ketogenic diet?

Yes. I've been on a keto diet for over 2 years now and use this. It doesn't spike insulin. Just make sure you don't heat it up or it will become a digestible starch which will make it no longer keto friendly. I don't recall the temperature threshold it can go to before converting to a digestible starch, maybe 140F, but I'd look into it if you intend to use it in food that is above room temp.

Q: Has anyone use this in baked goods? If so what were the results?

I bake with inulin regularly. I'm getting resdu to order a new bag as the previous brand I used ' Just Like Sugar' is no longer available. I tend to use about 1/4 cup less than the recipe calls since I find inulin is sweeter than sugar. Works great for baking!
