This balsamic vinegar is the real thing. Initially when I opened this, I was a little let down, having read so many rave reviews, and seen videos of people calling it black gold. It didn't blow me off the planet like I expected.But then, over the course of 24 hours, I began to understand for what it really was. With each spoonful I appreciated it more and more, for it's realness, it's lack of astringent acidity, it's beautifully smooth feel, and it's complex mature flavor.Mature. Mature is the right word for this. Everything about this vinegar is mature. It doesn't smack you in the face shouting for your attention. It sits back quietly, and let's you begin to realize the quality of what you are really tasting.There is something special that happens when a vinegar ages for 25 years going through different types of wooden barrels, and that is what makes it different than just a thick grape juice syrup.And of course, this is an entirely different thing than the supermarket balsamics, which are basically grape-flavored wine vinegars. They are good for what they are, just different.I finished this entire bottle in one day just using a spoon, and I have no regrets.

Great balsamic vinegar and great company
I am a professional chef who owns a business with a team of personal chefs working for me in CA and MA. We cater to some very demanding customers who request some of the best products money can buy. I have been looking for high quality balsamic vinegar for quite some time. I have tried many different brands in the past, and finally found this one from The Balsamic Guy. It is not cheap, but if you can afford it, this by far exceeds any other balsamic vinegar in the market by a mile. My customers and chefs all rave about this vinegar. I did some research and found out that this company is the direct importer for the US market of the consortium of traditional balsamic vinegar in Modena, so they obviously can secure the best bottles to sell. The owner is very friendly and will answer any question you might have. He made me feel at ease guaranteeing all of his products. I highly recommend doing business with them.

Simply the best Balsamic Vinegar in the world
The media could not be loaded. My wife and I love to cook. We also have a business where we cater to very demanding customers. We pride ourselves in using all natural and the best ingredients possible. We have tried Mia Bella, Mussini, and Leonardi balsamic vinegar in the past, and this bottle we purchased from The Balsamic Guy is without a doubt the best. Unlike the many industrial made balsamic vinegar in the market, this balsamic vinegar of Modena is the only type with DOP certification, which protect consumers against fake products. In addition, this bottle of vinegar was rated at 266 points! That's an incredible score even for traditional balsamic vinegar high standards.This product is obviously not for everyone. It is an expensive bottle of vinegar and we use it sparingly only for special occasions. However, when we want to absolutely impress our customers or dinner guests, a few drops of this vinegar will transform any dish into a culinary masterpiece. In the end, you get what you pay for and this is by far the best balsamic vinegar you can buy, period. You can find cheaper traditional BV at around $100 for scores in the 230-240 range. Everything less than that is most likely a condiment which is usually a mixture of grape must and wine vinegar, and not aged as long. Speaking of aging, beware of any aging claims or numbers printed on the labels, as these products are not genuine and an attempt to confuse the customers. There are strict regulations in Italy against printing the age of the product on the label. Simply put, aging alone means nothing. It is not a guarantee of the vinegar quality. However if the product is rated with a high score, that's what you want to have.We are absolutely in love with this product and highly recommend it to anyone who is willing to spoil themselves with one of the most exclusive food in the world. High quality balsamico
This is the same balsamic vinegar I used to buy at the acetaio when I lived in Nothern Italy. Expensive but worth the price.

Excellent - the best
This was my best balsamic and second true “Traditional Balsamic Vinegar of Modena DOP” (“Aceto Balsamico Tradizionale di Modena DOP”). I had to try this “gold” version (aged 25 years) from the same importer - The Balsamic Guy/Villa Ronzan - from whom I bought earlier the “silver” version (aged 12 years) and liked it very much.Now I understand there are 3 classes of balsamic vinegar of Modena:1) True thing: “Traditional Balsamic Vinegar of Modena DOP” (“Aceto Balsamico Tradizionale di Modena DOP”) - 12 yo or 25 yo;2) Commercial imitation: “Balsamic Vinegar of Modena IGP” (“Aceto Balsamico di Modena IGP”);3) Lower quality commercial imitation: Dressing with balsamic vinegar of Modena (“Condimento a base di “Aceto Balsamic di Modena IGP”).My family tried all 3 categories and can confirm that 1) is better than 2), which is better than 3). We like them all, but can clearly taste the difference.Within the best category the 25 yo ($180) is perceivably more dense and intense than 12 yo ($100), but perhaps 12 yo is the best value (and “Amazon’s choice”) considering the major difference in price, and a minor (but clear) difference in taste.

Delicioso and worth every penny! Use as a finishing condiment and the bottle will last six months.
The bottle lasts a long time. I dribble it on Caprese salads, strawberries and add a drop to shards of good Parmesan. Just a wonderful enhancement, well worth the money. Use it sparingly and it will last. Try combining it with a good olive oil, then dress a green salad with a few slices of fresh or grilled peaches. Add some Fleur de Sel crystals and a couple turns of cracked pepper, a few crumbles of goat cheese. Oh...my!
