This is my second purchase of this pasta, first one had two bags, this one four. I can not do gluten due to an intolerance. So upon trying it twice with my first purchase and having no issues with the small amount of gluten, I am sold on the product. The flavor is great and the texture is wonderful . Regular pasta has a bit of a gluey texture but this has a real delightful whole grain texture. I use it in all my recipes but I especially like it with olive oil, butter , garlic and , of course, fresh grated Parmesan cheese. Try it , you will not be disappointed. The price is well worth the quality and healthy nature of an ancient grain. Thank you Papa Vince and company for caring enough to continue to grow this ancient grain. Ciao Ciao

While we are housebound, I am making pasta A LOT! We got our first order of Papa Vince's Low Gluten Clean Pasta last week. It set a new standard. The highlights -- it was fragrant, had just the right tooth (al dente), and it didn't stick together. We also loved the texture and how every bite was wrapped in sauce. Because it's got a cool shape, next week I will add it to a batch of vegetable soup.

Pasta with flavor, who would have thought it? Healthy, clean-food, and per my CGM it has only a modest impact on blood glucose level. I prefer 9 minute boil time. I add this pasta to vegetables and Alfredo sauce.

Wanted the light colored

I've had both varieties of the Papa Vince pasta - I love both but I think my favorite is the Tumminia flour because of it's interesting texture & flavor. The busiate style really grabs onto pesto or whatever sauce you prefer. Now I have to try some of the other Papa Vince products. Thanks for having a great product.
