Any light detergent can be used. No chlorine and non flammable.

Can I use the steam mop attachment (on the lowest setting) to remove soot off a kitchen ceiling?

I believe the rectangular floor tool covered with microfiber would be better and would work well. It's thin and lightweight and has a fully articulating head which I think would be better for reaching overhead. This model produces a dryer steam at a higher pressure than most models which seems preferable on ceilings, since they're often painted with a very flat finish ceiling paint which offers no protection from moisture to the drywall.
