Q: Will this fit ar-10 308 magazines?

I'm pretty sure it would not. It's a tight fit for the 556 mags

Q: Will the main pocket fit a medium sized set of binoculars? With the mag pouch removed

The magazine pocket maybe. Looks up the dimensions for a regular AR mag and compare. The Velcro pocket might have a little more luck. It’s a little wider and deeper.

Q: how big are the pouches? I have magazines that are 3 inches wide and 2 inches tall (it's a spring shotgun, don't expect greatness)

The front velcro pouches are 5x4, but if you extend the flaps a little you could get a couple more inches in height. The rear rifle mag pouches fit rifle mags. They're about 2 1/2 wide and 5 1/2 inch tall. There's a bungee with open top carry option. The bungee could stretch and fit a magazine about up to 10 inches tall. So to answer your question, your magazine should fit in the front velcro pouches. It'll should fit in the rear rifle pouches too, but the width will mage it a snug fit.
