Post 2 years review: Very Very sharp: You will need a knife protector
I have had this knife for 2 years now and it is still very sharp. Excellent for finely chopping onions, garlic etc.. Slicing fresh meats such as chicken breast into cubes or strips for curries and fajita's. extremely sharp so you will need to be careful and also I recommend a knife case (magnetic is best) that completely covers the blade. Global Knife Blade Guard - Size 2 I use a plastic flexible chopping board designed for sushi with mine. This blade should only be used on fresh boneless meats (not frozen) as it will not have the strength to cut frozen produce. You will need to keep your traditional meat cleaver for that. I was not easily swayed into buying a ceramic knife as I couldn't ...
I have always dreamt of having a knife as sharp as this. I was not easily swayed into buying a ceramic knife as I couldn't see how it could be as sharp as my favourite steel one. But I'm amazed, and my dream has come true, it's almost like a surgeons knife, I should think. I make a lot of chicken jerky for my dog. Usually a slow and painstaking job with my sharpest steel blade, even though they are part frozen. With this wonderful knife it's a doddle, and a joy to use. I also get more slice from the breasts as I can make thinner slices. I shall save up to buy another knife, a tad expensive, but so worth it. Highly recommended, and great service from the seller. 5*

You get what you pay for
This is my second Kyocera knife, which I bought to replace a cheap ceramic knife I had bought from Aldi, wrongly thinking all ceramic knives would be of similar quality and you were only paying for the name. This knife is so much better than the cheap ones because it has a much slimmer and hence sharper blade that enables you to cut the softest of tomatoes with only the lightest of pressure.Unfortunately, since getting this knife I have realised my old Kyocera knife, which I previously thought of as being sharp now requires sharpening. Consequently I have now ordered a Kyocera sharpener to hopefully bring the old knife (had it more than 5yrs) up to the same sharpness as the new one.

Disappointed
Used once to slice vegetables on a wooden chopping board the day it arrived. Very sharp, very easy to cut and slice. Checked the blade after and there are 4 chips taken out of the edge.The knife was not subjected to any other force then slicing on wood....Very disappointed.

Be careful with your fingers
Sharpest knife I have ever purchased. I bought it for cutting sushi and it was so sharp I cut my hand while washing it and cut the sponge while scrubbing it.I use it to cut frozen meats and everything else solid, especially hard carrots which all my massive kitchen knives fail to do a proper job with. It's been 6 months and it's gotten slightly blunt, but still very sharp. It no longer cuts my finger with minimum pressure. But overall, an excellent help in the kitchen. Perhaps it got blunt because I use it to cut all sorts of rubbish. Yes, it's still good for sushi.
