Outstanding Value
I have 3 Zelite knives. To be clear, these are not "Japanese knives", they are Chinese knives made with Japanese blades. I also have a Chinese knife made with a German blade, but that's another story (though it's also an excellent knife). I have seen comments about this brand and others sold on Amazon that these are "fake" or "copies of" Japanese knives, which is really in the eye of the beholder. Here's how I see it: The part of the knife that you use and maintain, i.e. the blade and its cutting edge, are Japanese and of a very high level of performance. Goods of Chinese manufacture are often characterized as "cheap" or "mass-produced" and in many (most?) cases that's true. But let's also remember that Asian cultures have been blacksmithing for at least 3,000 years. 2,000-2,500 year-old Chinese swords have been found intact by archaeologists that were still so sharp that they drew blood upon discovery. So the notion that Chinese manufacture of cutlery is arbitrarily a low-grade enterprise is a false premise. I've had my 8" Chef's knife for two years, this one for a year. All of them clean, sharpen and hold an edge as well as the $200+ Japanese knives I also have in my block (Shun). For less than $70, this knife compares favorably to others that cost $150 or more and that's not an exaggeration. Same with the Chef's and slicing blades I have - I'd say value is on the order of 30-40¢ to the dollar compared with premium Japanese products that utilize Damascus (layered) forging. I can probably afford to spend more, but I honestly don't feel as if I have to. The thing that I actually like better about the Zelites is their heft: between the solid tang and weighted handle, plus the fuller size and shape of the handle, these knives actually feel better in hand than do Shun. Leverage of this slicer and especially my 8" chef is perfect; I've seen a complaint from one buyer about the knife being handle-heavy so I think that may be a subjective preference. I have small hands for a guy, so I find the feel to be just right (if you're a knife nerd, the balance point is where the handle material meets the bolster, which isn't all much out of balance for the length of these blades.) I am especially pleased at how well my straight blades sharpen with just a few swipes on my ceramic rod - they're easy to keep EXTREMELY sharp if you have skills with sharpening rods or steels. This one, the serrated edge, has required NO maintenance since I bought it, just cleaning. Every one has their preferences; I use it primarily on mushrooms, tomates and smaller loaves of bread. These knives perform remarkably well - I'm not a pro but a an experienced enthusiast - and these blades work well enough for pros and are more than adequate for amateur cooks. In fact, for people who don't have good knife skills, these might be TOO sharp.

My New Favorite Knife- Excellent for Preparing Chopped Nuts, Hard Cheese, Melons, and More!
The media could not be loaded. You could say I am a big fan of Zelite Infinity products. Each knife in their collection is a masterpiece, and a real pleasure to use in the kitchen. I have been anxiously awaiting new releases and I was pleased that the serrated knife was added to their collection.Out of the box, you will not find a finer serrated utility knife on the market in store or online. The knife is well honed and ready to do it’s job without additional sharpening. In fact, I have learned to treat Zelite knives with the utmost care because they are so sharp! The blade is superior in quality, made of Japanese Super Steel —66 layer carbon stainless steel with Damascus style patterns. The handle is full tang as with all their knives, and well balanced through out.I have to say this is my favorite Zelite Infinity knife simply because of it’s versatility. It is like a bread knife (I own their 8 inch bread knife), but shorter in length and much easier to handle. It feels great in my hands. In my video demonstration I use it to slice a small orange. The knife sliced through the orange smoothly, without squashing it and turning it into orange mash. Serrated utility knives are great for slicing not just hard crust bread but also rind fruit, melons, hard cheese like parmesan, tomatoes, and finely chopping nuts and chocolate. I can definitely see my self using this knife for doing the majority of prep work for my next wine and cheese social event.If you are looking for an excellent quality knife that is a compromise between a bread knife and a chef’s knife, this is the knife for you. 5 stars!

Ruthlessly sharp and looks amazing
This 5.5 Inch Serrated Utility Knife (or fruit knife if you prefer) by Zelite Infinity hits all the best characteristics of a super league product. Where to start?The blade is ruthlessly sharp – and I mean, scalpel like sharpness. It slices everything I have put in front of it with utter ease. I especially enjoyed slicing wafer thin slices off a large beef eater tomato – it was kind of satisfying to see this blade perform.The blade itself is Japanese steel and is a combination of steels. The inner core is Japanese VG10 Super Steel which is clad with 33 layer per side of SUS410 High Carbon Stainless Steel. What does all of this mean? It means the blade can be sharpened to take an extremely sharp edge and maintain it over time, plus due to the outer layers of stainless steel it boasts stain and rust resistance.The handle is made from a black G10 military grade fibreglass which is known to be moisture, heat and impact resistant with fantastic wear properties. This is fastened to the solid full tang handle using 2 stainless steel rivets and an intricate multi metal master piece rivet. The shape of the handle is rounded and has a very comfortable feel to it. The knife is a full blade design meaning you can cut the entire length and it also comes with a very comfortable tapered bolster.I purchased a wooden magnetic wall mounted block for my kitchen to hang my knives on and must admit it looks rather awesome. The blade is polished and the black handle with the golden rivet just looks somewhat classy.The product came in a very nice magnetic flap gift box but there is no risk of me giving this away. Maybe I might purchase one for my mother from Christmas if she is luckyWhat a great product and an outstanding company to do business with

Great, quality bread knife
Quality and craftsmanship are excellent. Comfort int the handle is awesome. Balance is great. Only drawback for me is that the serrations are too pointed. It grabs instead of cutting. I spent more money and found something with more rounded serrations. I cut through around 200 orders of toast a day, plus house baked bread. I don't want to have to rip through it.
