An amazin Knife!
I have used the regular Zwilling 8" knife for many years and loved it. However, lately I found a need for the same shape knife but shorter and this 6" knife is PERFECT! Well balanced, beautiful knife does all the jobs the 8” did and more. Great precision cutting for smaller jobs and enough heft for larger ones. I recommend it for anyone that enjoys cooking and even for the more professional cooks.

I have been using the Pro S line for over 10 years, and I have been very happy with my slowly growing collection. I am an amateur chef, professional custom metal fabricator, and I have been a "knife guy" since before I could spell the work knife. This review is primarily of the 6" chef knife, though it will indirectly review the 10" chef and 6" utility as well, which I have owned for quite a while. Before we get into the meat of things, I would like to remind whoever might be reading that they will definitely want to handle a knife IN PERSON before buying one. A knife is a very personal thing, and buying a knife online is like buying a shirt online. The picture may look nice, but it may not fit worth a dang. The 10" is, at least for my hand and cooking style, just about perfect. It's a bit large for those recipes that only require knifework for a small onion and a garlic clove or two, but otherwise it sees a lot of use. The 6" utility that I have owned and loved for many years just didn't have enough knuckle clearance and garlic smashing surface area, so I figured I'd get the 6" chef and it would fill the gap. I usually use the santoku, but I really do prefer the full bolster. I think Henckels uses the same handle for ALL sizes of the Pro S chef knives, because the 6" chef is a chunky little bugger. The handle is much larger and heavier than on the utility. Also, the blade is only about 1/4" wider than the utility. It would be nice for it to be a bit wider, but it is enough to provide knuckle clearance and enough space for a good pinch grip. It came with a surprisingly nice factory edge (the 10" was way too obtuse and required a session with a large bench stone). The 6" chef thickness is probably 0.030" more than the utility (I didn't put a mic on it, it's just an educated estimate) which may come in handy with the extra oomph I can apply with the chunky handle. Were I to design the 6" chef, it would have a slightly wider blade and the handle of the 6" utility. Otherwise, I am quite happy with it. I will be buying more Pro S knives in the future. For anyone interested in the Pro S, here are a few reminders. Have a cheap set of leather gloves and a package of steel wool handy. These things come with sharp edges where there shouldn't be. Fixing that very slight issue takes neither much effort nor much time. These knives are not something you have around to brag about (like some people do with kitchen knives). Metallurgically, they are nothing special. They are very traditional and common in design. Let them occupy a quiet corner of your kitchen counter, and save your showing off for the cooking you do with them.

Reliable Quality
I purchased both the 6" and 8" Professional series knives to replace some of my old cheap ones. The 6" Pro S is very comfortable in my hand, balanced, and sharp enough to get the job done right.

Great knife
This was a replacement for the same knife which was stolen. Why did I get the same thing? The balance, the weight, the traditional look. I have used this knife for over 20 years. It is the right size for most jobs. The blade is sturdy, not too thick, doesn't rust, easy to sharpen. My workhorse! this knife, plus a Japanese bread knife and a knife sharpener are the things I give as wedding gifts.

The only knife you need
I'll admit it - I've fallen in love. I first used this knife at a friend's house, and was blown away by the ease of use - the ginger and garlic practically minced themselves. I immediately ordered it, and have been delighted ever since. The handle fits my (small) hand perfectly and is comfortable to use, it cleans in a snap, and it can cut through anything - no more slamming the spaghetti squash down on the table with a hatchet. One of the best purchases I've made - well-worth the money.
