Not sure what type of wood it is, I use it for my crawfish pot, but I did notice after about 5 uses It started to splinter on the edges. Otherwise It's good for what I use it for.

The paddle itself is strong enough, your mounting point to the wall would be the question.

Q: Could you urethane it to prevent flavor and bacteria from entering the wood? Would the high temperatures break down the urethane?

I wouldn't urethane it. If you're stirring a huge pot of boiling ingredients, I'd be more concerned with urethane messing with the flavor and contaminating the food than left over residue or bacteria?? I just rinse mine off afterwards and call it good.
