Q: Do the chair squeak or make noises as you lean or move around on it?

Yes, I purchased one of these a few months ago and while I like the seat, it does squeak. Enough to disturb my work zoom meetings. I have tried WD-40 as another mentioned. It seemed to briefly help (did not go away entirely), but then was just as bad about 2 weeks later. I am going to reach out to Vari and see if they will help to resolve the issue.... I wonder if it is related to weight, and maybe that's why it is only experienced by some? I am about 190lbs.

Q: Is anyone over 6' tall using this comfortably? I'm 6'3" and I wonder if its highest setting will be sufficient for me to use.

I am exactly 6' tall, but based on how you place the standing desk chair, I believe you would find it sufficient for support. You will need to place your feet more in front of you as you rest on the seat (best estimate I can give not knowing what 6'3" is like). It is very easy to make it shorter when you decide to sit, bringing the Varidesk down to that level. I am very pleased with how it is working for me.
