Not your megamart salami!
I love the taste of this salami. This is a dry salami and is intended for eating differently. It should be sliced thin and savored. Just an ounce or two per helping at most. Though, in its origins, this was simply how meat was preserved, out tastes today are not used to or expecting the intense flavor of meat. We prefer our meats today with the flavors bred out of them and, if any flavor is left, we make sure to cook that out, too. This salami is not meant for making a sandwich like Oscar Mayer salami and it's not the same salami as the deli hard salami that has much more moisture and must be kept refrigerated. This is a dry salami and can actually be stored at cool room temperature (up to 72 degrees is how I store mine) until opened. All such dry sausages will have much more intense flavors as the moisture is drawn from the meat. I've also frozen them for extended periods and they're just as good when they thaw.Bridgford products are available often at local groceries or chains of small dollar-type stores. Find and buy a single package before buying in bulk and see if you like it.I know people have different tastes and different sensitivities to flavors but I get the impression that most of the negative reviews are simply that people do not understand the world of charcuterie and the intense flavors in dried sausages. I recommend finding small portions of charcuterie and trying them out. But approach them with an open mind and a cracker, cheese, and wine rather than a Ritz cracker.. Any foods with such intense flavors are meant to be eaten not-too-often and in small amounts. Once you discover the common flavor notes that all charcuterie share you will recognize that these sausages are not bad at all. Although they share flavor notes with other charcuterie, they have their own flavor as well. No, I don't work for Bridgford but I have been a fan of their products for 20 years.

Meh.
Given the positive reviews posted, I thought I ought to give this sausage a try, particularly given the higher cost of salami I had purchased from other companies (Columbus Salame Company and Fortuna). The Bridgford salami was kind of a disappointment-fibrous and greasy with a somehow duller taste. Kind of like a Slim Jim with less heat and more sawdust (I'm not implying there is really sawdust in it-it just has a different texture that what I'm used to). My wife took a bite out of her slice, then put it aside and didn't nibble on it further... that is actually not a common outcome in encounters between my wife and bits of food. I did bake it with some cheese in some soon to expire canned pizza dough and it was pretty decent-my son really liked it. All in all, I'd say go a little upmarket if you are going to use the salami to snack on with fresh fruit, olives and whatnot but this product is probably fine for cooking.

a staple in our home
i've been buying this salami since 2015 and it has never disappointed me. no, it doesn't taste like the cheap salami that's super salty and mushy that you get from the grocery store. it's flavorful, extremely fatty salami that melts in your mouth as you chew and hit you with a sudden burst of salty goodness near the finish. we eat it with ritz crackers of various flavors and they're great!sometimes we'll also slice them into strips and steam them. they take on a chinese-sausage like consistency that goes amazingly well with rice. can also dice them and fry up some rice or noodles with a bit of soy sauce, garlic and onion. ordering some now :)

Tangy flavor, smallish chubs.
Great flavor. Has some big bits that are hard to chew up, must remove from mouth, or maybe I just find that less than pleasant. Bought the pack of 4, used 2 for a party, gave one away as a little present, and ate up the other with raw vegetables and cheese. Again, great flavor~ kind of tangy.

Unfortunate aftertaste
It has a very poor aftertaste. I ate it with sliced cheese and crackers. I was grateful for the cheese as it's the only thing that saved the flavor. The meat itself does not have much flavor to it, which for me was disappointing, but it leaves a bitter aftertaste. Honestly, it tastes like what I imagine preservatives would taste like if you directly ate them. Based on comments, it's just my uneducated palate that's the problem, but I've had a number of different types of salami, and this is the first time I actually disliked salami. Thus, if you haven't had salami like this before, be forewarned it may not be to your liking.

Delicious Murder
I just tried Bridgford Hard Salami for the first time. I'm no salami expert, but I have been eating food my whole life, and this tastes really good in my opinion. The texture isn't grainy like some of the more gourmet brands I've wasted my hard earned dollar on. Surprisingly it isn't very greasy, no gristle bits, no bitter aftertaste, and it smells good for a salami. Their use of salt and spices are well balanced. You could eat this with a sweet beverage and there is no conflicting flavors. Overall I rate this 5 stars and will be ordering this from Amazon again.

Very good salami
I enjoy the bridgford salami. I eat a sharp cheddar cheese with french bread or wheat crackers with a slice of salami on top. I have tried other brands but always return to this selection. The only reason for 4 stars rather than 5 stars is that there maybe another brand I haven't sampled yet.

Cant beat it with a Ritz and some pepper jack cheese!!!!
A little greasy fresh out of the cryovac, but nothing a paper towel wont deal with in short order. I ran it through my slicer and made a whole roll into very very thin slices and it made perfect hours dourves with a ritz cracker and some cheese!!!
