It does not melt. I put some that I reconstituted and made a lovely looking spreadable "butter", but it did not melt at all on the veggies, even though they were scorching hot out of the oven. It also has the feel of flour in your mouth even though it looks creamy. I even added a touch of peanut oil, and it did not help. Didn't hurt, but didn't help. Would not recommend it for skillet cooking, as the butter ends up burning as a powder onto the skillet, even after making it spreadable. **Q: What is theShelf life after opening?** A: The shelf life decreases down to 1 year after opening the product.
