My "Go To" Ice Cream Scoop Kit
I have been making many ice cream and other scoops as gifts, to date about 30 in all. I have tried at least 5 different scoop kits from different vendors. Some have threaded shanks. some are larger, some have a different overall shape such as a "hawk's beak" or a "paddle" or a thumb-operated lever that operates a sweep that clears the lump of ice cream [or cookie dough] from the scoop. But this design has become my overall favorite. For my projects, I deviate from the manufacturer's recommended installation. I bore the hole in the handle to be very slightly larger than the round shank, and then using a jigsaw blade create shallow slots [keyways] in the bore to accept the tabs that protrude from the shank of the scoop. My only complaint is that the bezel supplied with the scoop is not up to the quality of the scoop itself. The bezel is made of extremely thin gauge sheet metal. It ought to be made from a heavier gauge metal. And perhaps the integral shank should be about 1/4" longer to provide even greater strength in connection to the wood handle made by a user of the kit.

Nice and sturdy, it should hold up to the toughest ice cream.
I turned the handles on all three scoops and am happy with the results. The only downside is the shaft is glued into the handle rather than screwed in, so it must be hand washed. This is, at most, a minor nuisance, as I have wooden handled knives and spatulas that must also be hand washed.

Not as Exspected
When making Ice Cream Scoops in the past, I was able to purchase scoops that were a little larger and they had 3/8" diameter threaded shafts to attach them to the turned handles. These scoops were smaller and didn't have threaded shafts to attach them to the handles.I will be returning them as I finally found the ones I want at Woodcraft and Walmart.

Good enough
The thimble is really thin metal, but that is okay if epoxied in place. Scoop is also glued in, not threaded. These work well enough to reorder
