Why did the price on these double since I ordered them last?

I subscribed to these automatically every two months for at least a year. I've never paid over $13. I just checked my subscription for November and was shocked at the current price. Cancelled my subscription immediately. I will not order these again. Sam's Club carries them for around $12. I will made sure I check all of my subscription items every month. I did not receive a notification that the price increased.

Does this have sodium nitrate? which causes cancer

Yes this product does contain sodium nitrate and is added as a curing ingredient and anti-oxidant that gives cured meats their characteristic color and taste. Nitrite used in cured meats is extremely effective in preventing food borne illnesses. Curing with nitrates has been used for thousands of years to produce safe and nutritious products and to effectively preserve meat. Nitrates help make foods safer for us to eat.

What is the expiration on this batch?

I don't think the expiration was past. I bought some and they didn't seem fresh. One was soft and the other patch was hard. I don't plan on ordering it again.

How is the beef steak different from the regular beef jerky?

Tough question. Jerky is thinner and drier. Jerky taste about the same but this is like squares of steak that have been cut. If you have your own teeth then go for it but anyone with dentures would most likely find the thicker cut challenging.
