it cuts things so cleanly and smoothly...i have NEVER ever experienced a knife that cut things so neatly, so smoothly, so incredibly! WORTH EVERY PENNY and am looking forward to buying the set!! You don't have to struggle in the kitchen again!! A bad knife, or a bad pot, makes cooking a struggle...

Bird's Beak perfection
First thing to note, if you've not used a bird's beak before, is that this is a specialty function knife. Don't buy it before you get (at least) a few other kitchen knives, especially a parer/utility and chef's knife. Some relatives have come over and tried to use it in conjunction with a cutting board and quickly set it aside--which is fine because they were getting ready to slice a finger off.I've used it for fluted mushrooms, which is still more work than I'd like, and it does the job fine. It also works well with paring hand-held fruits and vegetables, but not being an expert, I still prefer the conventional gizmos for that.Where it excels for my wife and I is in cutting up poultry. We usually buy our birds whole. The only time we carve is Thanksgiving. The rest of the time, whether before or after cooking, the knife of choice is this Global bird's beak. It is a veritable joy to disencumber our fowl of their appendages and such. "A hot knife through butter" as the saying goes, applies perfectly here. A whole bird is easily sectioned into six to twelve pieces in seconds. A cleaver can work as fast, but we're more joint-finders than makers, and the small knife and no-cutting board approach works great for us--less space taken, less washing, less mess. The curved point and shorter blade make the non-cutting-board approach such a good choice--I sure wouldn't recommend this technique using those 10-inch "broadswords." Of course a good chef's knife can work well too--you gotta have them, but this Global is perfection.Sharpening takes extra time and care, but it rarely needs it--keeping a razor edge for at least half a year with about once-per-week use.

Great knife.
I use this knife daily in my Bistro to open plastic bags, cardboard boxes, cut meat, and more. I only wish that it came with a sheaf. Very sharp!! Balanced blade.

Great knife, good times
I bought this knife after my first semester in culinary school. When your doing tourne's on a daily a good knife is a must. It can take abuse and keep an edge, the feel of this knife in anybody hand is amazing.

Decent knife. I bought it to replace an old bird’s beak park knife whose blade wore out. I appreciate thaf this knife is all one piece of metal as it makes it easy to sanitize at work. The blade is fairly sharp, I just wish the handle featured a bigger diameter for large hands.

now my favorite detail knife
Global does it again. This tournet knife is great. fits well in my hand. that being said, I have small hands. this is the knife with the thinner handle, so after a while, you have to really grip it as it can slide. (I do miss the thicker handled knives). but it remains sharp, one-piece design so as not to harbor bacteria and the like, and is well balanced in the hand.

Not a necessary knife, but comes in handy for hulling strawberries and other small detailed trimming or cutting work. Extremely sharp. Would recommend a small knife sheath for storage, both to protect the blade as well as yourself.

Schönes & praktisches Messer
Das kleine Schälmesser ist rasiermesserscharf und liegt gut in der Hand. Andere Messer schneiden auch gut - aber das GLOBAL-Messer ist zudem noch außerordentlich schön. Und deswegen macht es größte Freude, damit zu arbeiten!

è il mio secondo pelucchino global, l'altro lo uso da ormai venti anni. per sbucciare sono davvero ottimi, ecco perchè ne ho preso un secondo. arriva molto affilato, tende a perdere il filo iniziale abbastanza velocemente, ma si ravviva facilmente con uno stick ceramico.un minimo di manualità per seguire il filo curvo serve.per il mio parere è assolutamente da avere in cucina.
