Sunburst Black Jumbo Raisins - Non GMO (No Artificial Flavourings, Sweeteners or Preservatives) 500g

These raisins are just as they say, fat and dark, and sweet.I use them to add to no-churn, home-made Elderflower Liqueur ice cream. Very easy: Half a can of Nestle's condensed milk (405g size), 1 large pot (600 ml) double cream, BIG splash vanilla essence, St Germain (or M&S) Elderflower Liqueur to taste, large handful raisins.First, soak raisins in enough liqueur to cover for at least an hour, or in the fridge overnight. Drain, saving the liquid and raisins separately.Whip condensed milk, cream and vanilla essence together till lighter and fluffier, about 5 mins with a handheld electric whisk - then very gently mix in the liqueur you've drained from the raisins, and lastly fold in the raisins. Taste and add more vanilla essence/liqueur if ness.Freeze for a few hours. No need for an ice-cream maker and no need to take out and mix every hour or so.You could also swap the liqueur for rum to make Rum and Raisin ice cream - or any other flavour you fancy.Yum!

Had these in Spain in a goats cheese salad. Bought for their size and so they could be soaked in Pedro Jaiminez Sherry (Nectar) for four weeks and added to walnuts braised in runny honey and Cointreau. Luxury and with just a few to discover among the leaves and beetroot.
